Kulebyaka

  • 2 tsp yeast
  • 1/2 tsp salt
  • 1 cup milk
  • 2 tbsp sugar
  • 1/2 lb butter
  • 3 cups flour
  • Filling (see notes)
  • Egg wash

Pastry base:

Warm butter and milk until butter melts; do not boil.

Let cool slightly, add yeast and let set for 15 minutes.

Add salt, sugar, flour and mix to create dough.

Refrigerate, covered, for 3+ hours.

When ready to bake, roll out and braid or otherwise prepare to fold over. Layer filling and fold. Make sure both the filling and the dough are cold at this stage, as the butter will melt otherwise.

Let rest for 15 minutes.

Brush with egg wash (1 egg, 1 tbsp sugar, 1/2 tsp salt). Bake at 350 F for about 40 minutes. Filling Filling can take a few forms. Two varieties include: Mushroom: Mushrooms, cream cheese, onions, dill, thyme, salt and pepper. Breakfast: Cubed potato, sausage, mushroom, onion.

Salmon: Very traditional; salmon, onion, whatever you think goes with salmon.
