Falafel

  • 2 cups dried chickpeas
  • 1/2 tsp basking powder
  • 1/2 cup fresh parsley
  • garlic, 6-8 cloves
  • 1/2 cup fresh dill
  • 1 onion
  • salt
  • pepper
  • 1 tsp cumin
  • 1 tsp coriander
  • sesame seeds

Soak chickpeas in advance, around 24 hours. Chop onion into pieces.

Add ingredients, except sesame seeds, to food processor and grind a fine meal. If using dry herbs use less, to your best judgment. Heat oil. Form falafel mix into patties and add sesame seeds to outside. Fry until dark, about 5 minutes to a side. Wait the full five minutes before turning (if turning) to avoid the patty falling apart.
